Pitta Pizzas

Serves 1 person

Cooking time: 15 minutes

  1. Wilt the spinach in a little olive oil over a medium heat, set aside and allow to cool for a couple of mins. When cool enough to handle squeeze out any excess water.
  2. Divide your pitta in half and spread each half with the tomato puree followed by the wilted spinach.
  3. Top each half with tomatoes, olives and feta cheese.
  4. Place the pizzas under a hot grill for about 5 minutes until the fillings are hot and the feta is starting to brown.
  5. Drizzle with a little olive oil before serving.
