Cooking time: 15 minutes
- Wilt the spinach in a little olive oil over a medium heat, set aside and allow to cool for a couple of mins. When cool enough to handle squeeze out any excess water.
- Divide your pitta in half and spread each half with the tomato puree followed by the wilted spinach.
- Top each half with tomatoes, olives and feta cheese.
- Place the pizzas under a hot grill for about 5 minutes until the fillings are hot and the feta is starting to brown.
- Drizzle with a little olive oil before serving.
