350 g chopped into florets

Vegetable Stock
250 millilitre

4 tbsp crushed

  1. Heat your oil in a pan and add your onions, for best results sauté for about 6/7 minutes.
  2. Add the broccoli and stir until well coated.
  3. Remove from heat, cover and let it settle for a couple of minutes.
  4. Add your onion, broccoli mixture and lemon juice to the  stock.
  5. Puree in a blender until smooth.
  6. Add the soup to your bowls and top off with the lemon zest and walnuts.
