  1. In a measuring jug gently beat the two eggs with the ground almonds.
  2. Heat a little coconut oil in a frying pan on a medium heat.
  3. Using pancake moulds if you have them divide the mixture in 3. If you don’t have moulds it should work the same.
  4. Pop a few berries onto each pancake and leave till they are nearly set.
  5. When nearly set remove the moulds and flip over to seal the side with the berries.
  6. If you use blueberries they often burst with the heat and add delicious sweetness to the pancakes.
  7. Serve these with some natural yoghurt, we recommend 0% as there are healthy fats in the almonds.
  8. Add some fresh berries if you have them. Lovely weekend brekkie when you have a few extra minutes.
