Method

  1. Mash bananas and leave to the side
  2. Cream butter and sugar in a mixing bowl
  3. Make a well in the butter and sugar mixture and beat in eggs
  4. Add the mashed banana
  5. Sift the flour, baking powder, sodium bicarbonate, cinnamon, and salt to the mixture and stir together until combined
  6. Pour mixture into a 1 litre loaf tin and bake for 50 to 60 minutes at 150 degrees fan/ 170 degrees conventional oven
  7. Once browned on top, remove from the oven and allow to cool for 10 minutes in the tin before transferring to a plate.
