Heat a large frying pan over a medium to high heat. Cook your chorizo for 5 minutes. It will release its own oil so there's no need to add any to the pan. Once cooked, remove and drain on kitchen towel.
Drain some of the chorizo fat from the pan, leaving behind about 1 tablespoon worth. Now add your cubed potatoes and cook over a medium heat for 10 - 12 minutes. Add two teaspoons of salt. Shake from time to time to make sure the potatoes don't burn.
Now add your onions and garlic to your potatoes, cooking for a further 2 minutes. Meanwhile, heat oil in a small frying pan and fry your eggs.
Once your onions have cooked, put your chorizo sausage back into the potato hash. Re-heat for a minute or two so the chorizo is heated through.
Serve topped with a runny fried egg for guaranteed satisfaction!
