Job description:

Main purpose of the role:
Ensure the Meat Department operates efficiently and effectively at all times and provide our customers with excellent quality and products and services.

The ideal candidate will have/be:

  • Craft butchery course is desirable
  • Numerical skills
  • Excellent communication skills
  • Previous customer service experience is an advantage
  • The ability to work as part of a team in a fast-paced environment, ability to multi task under pressure
  • A passion for food and the ability to inspire shoppers
  • HACCP training is beneficial but not essential.

    Main duties:

  • Actively live Centra brand-values i.e. Proud, Energetic, Imaginative and Community-Based
  • Maintain retail cuts at a high standard in accordance with customer needs
  • Drive sales through ensuring SOPs and store standards are met on a daily basis
  • Merchandise and present department to the highest standard
  • Implement planograms correctly
  • Control stock rotation so that quality and freshness of goods is of the highest standard
  • Manage waste and shrink in the department
  • Ensure continuous improvement in the Meat Department by remaining up to date with new products and initiatives
  • Enhance product knowledge by gaining information from a range of sources and share ideas, suggestions and builds
  • Engage with new initiatives and embrace new ways of working.


  • About the locality:

    O`Neill`s Centra is a family run store in the village of Johnstownbridge, outside Enfield, in Co Meath.

    We are now seeking an experienced Senior Butcher / Qualified Butcher to join our team and play a key role in the continued growth of the business.

    Key Responsibilities

    Retail butchery, meat cutting, boning, trimming, and portion control

    Preparation and presentation of fresh Irish meat to the highest standards

    Ensure full compliance with food safety, HACCP, and hygiene standards

    Support management across a two-shop operation, maintaining consistency and quality

    Lead and support team members on the shop floor

    Contribute to product development, value-added meat products, and seasonal ranges

    Deliver excellent customer service in a retail food environment

    The Ideal Candidate

    3-5+ years` experience as a Senior Butcher / Qualified Butcher / Meat Cutter

    Strong knowledge of traditional butchery and Irish meat provenance

    Experience in a retail butcher or food service environment

    Interest in innovation and modern food trends

    Reliable, professional, and quality-focused

    Ability to work as part of a team and support junior staff

    What We Offer

    €40,000- €50,000 (negotiable, depending on experience)

    Full-time position

    20 days annual leave

    No Sunday work

    No Bank Holiday Mondays
