Spicy Potato Wrap

Sweet potatoes are a handy and filling addition to any meal - try out this spicy potato wrap recipe for a deliciously different way to serve up these spuds. 

Method

Pre-heat your oven to 200c/180c fan/Gas Mark 6.

Chop your potatoes into wedges, leaving the skin on. Transfer to a large roasting dish and add the curry powder, chilli flakes and salt. Drizzle over the olive oil and mix really well so that all the potatoes are evenly coated in the spices.

Roast for 25 to 35 minutes, until the sweet potatoes are tender.

Divide the potatoes between two wraps and serve with a tablespoon of natural yoghurt on each serving. Finish with a sprinkling of roughly chopped fresh mint.
