Raosted Pepper Bagel
This creamy scrumptious bagel is the perfect cure for the mid-day slump!
Pre-heat your oven to 200c/180c fan/Gas mark 6. Chop the red pepper in half and remove the seeds. Chop it in half again so you have four quarters.
Remove the seeds from the yellow pepper and chop in half so you have six pepper quarters in total. Place in a roasting dish with the olive oil, salt and pepper.
Roast for 15 minutes, or until tender. Remove and allow to cool.
Meanwhile, halve and toast your bagels. Top with the cream cheese.
Once cool, finely slice or dice the peppers. Spread them evenly over the bagels and serve
