If you’re cooking the chicken breasts especially,
cook them with olive oil for 8 to 10 minutes on
either side in a frying or griddle pan over a medium heat.
Once cooked through, set aside and allow to cool before chopping into bite-size pieces.
If you’re using leftover roast chicken, chop the chicken into bite-size pieces.
Assemble your lettuce leaves between two bowls. Slice your tomato and add to the lettuce.
Make the tsatsiki by roughly chopping your fresh basil and mix with the natural yoghurt. Add the water to the yoghurt so that it has a very runny consistency. Add the salt and pepper to the yoghurt.
Divide the chicken into two bowls. Drizzle the tsatsiki generously over the salad and serve.
