Stuffed Sweet Potatoes

  1. Preheat oven to 180˚C/350˚F/ Gas mark 4.

  2. Rub the sweet potato with half the olive oil and place on a large baking tray in the oven for 40-45 minutes.

  3. Meanwhile heat a large pan over a medium high heat, add the remaining tablespoon of oil and fry the bacon for 2-3 minutes until golden and crispy. Drain on kitchen paper and set aside.

  4. Once the potatoes are cooked, allow to cool slightly then cut in half lengthways. Scoop out the filling into a large bowl and mash with a fork, leaving ½cm around the skin. Add the bacon, spring onions and red chilli and mix to combine.

  5. Refill the potato shells with the filling and top with the cheddar cheese. Place in the oven to bake for 10 minutes until the cheese is melted and golden. To serve, top with a spoonful of sour cream.
