Bacon, Onion & Cheddar Cheese Portobello Mushroom

  1. Wipe down your mushrooms and carefully scoop the stem out with a spoon.
  2. Chop the stem finely and add into a pan with butter, minced garlic, sliced bacon and finely sliced red onion, cook until everything is combined. Add a small amount of breadcrumbs and diced flat parsley.
  3. On a baking tray, scoop your mixture into the hollowed out mushroom caps and cover with cheddar, bake in a 170 degree oven for about 20 minutes.
