Couscous Salad

  1. Place the couscous in a large bowl and pour over the boiling water or stock. Cover the bowl with clingfilm and set aside for 5 minutes, or until the water is absorbed, then fluff with a fork.
  2. Stir the cherry tomatoes, cucumber, pepper, sultanas and red onion into the couscous.
  3. Make a dressing by placing the oil and balsamic vinegar in a screw-topped jar and shaking well until combined.
  4. Season the couscous well with salt and freshly ground black pepper and drizzle over some of the dressing.
  5. You can mix couscous with all kinds of ingredients. Try using chopped olives, herbs or preserved lemons.
