Roughly chop the beetroots and place in your food processor. Finely grate the garlic cloves into the food processor and squeeze in the juice of the lemon, being careful to remove any seeds from the mix. Add the cumin, walnuts, oil, salt and pepper and whizz until smooth.
To serve, chop the carrots and celery into batons and the pitta bread into chunks. Serve alongside the butter bean dip.
