Heat the olive oil in a large frying pan. Cook the bacon for 5 minutes until browned. Add the garlic and cook for 2 more minutes. Now mix in the butter beans for another 3 minutes, until warmed through.
Meanwhile, make the toast. Once the butter beans have warmed through, divide over the two portions of toast and sprinkle the fresh parsley on top.
