  1. Place 1 tsp of oil in a skillet over medium heat.
  2. Add diced potato and peppers stirring for 8 - 10 minutes.
  3. In a bowl whisk the eggs, cheese and tomatoes. 
  4. Add the egg mixture to the pan cooking until set.  
  5. Top with baby spinach and serve.
