Enjoy a mouth wateringly fresh taste of Greece for lunch.


Black Olives

1 tbsp finely chopped

Chop the tomatoes in half and add to a large salad bowl.

Halve the red onion and finely chop it into half- moon shapes before adding to the salad bowl.

Squeeze in the juice of the lemon, being careful to remove any seeds from the salad.

Roughly chop the pitted olives and add to the salad bowl. Either roughly crumble the feta into the salad or chop it into cubes before mixing in to the salad.

Add the freshly chopped parsley, salt and pepper and mix all the ingredients together well.
