If you can’t get pumpkin you can use butternut squash as an alternative.
Peel and chop the pumpkin and leek into small pieces.
Melt the butter in a pot and add in in the leek and sauté until lightly brown.
Add in the chopped pumpkin and vegetable stock and bring to the boil then reduce to a simmer, cover & cook until the pumpkin is tender this will take about 30 minutes.
If you prefer your soup without the chunks, place into a food processor and purée until smooth.
