Grilled Courgette and Goat’s Cheese Sandwich
Crunchy courgettes are the star of this sambo while the creamy goat's cheese gives it that extra special flavour!

Courgettes 1 balls washed and sliced into strips |

Pasta 350 g ie. tagliatelle, cooked and kept warm |

Method
Heat the grill to high. Arrange the slices of courgettes on a roasting tray so that they are not overlapping. Drizzle with 1/2 tablespoon of olive oil and sprinkle with the salt and pepper. Grill for 10 to 12 minutes, turning over halfway through.
Meanwhile, toast the ciabatta loaves and spread each one with a tablespoon of tomato relish.
Once the courgettes are ready, divide them between the ciabatta loaves. Crumble the goat's cheese (or layer slices of it) on top of the courgettes. Finish off these scrumptious sandwiches with a dollop of pesto on each. Delicious!
