Asian Inspired Chicken Salad

This healthy chicken salad with Asian flavours has a real kick to it. Try it today to give your lunch an exotic twist!


Heat the teaspoon of olive oil in a small non-stick frying pan and fry the chicken for 8 to 10 minutes, until cooked through and golden in colour.

Meanwhile, mix the lettuce (or cabbage if using), carrots and red onion in a large bowl. To make the dressing, mix the olive oil, soy sauce, chilli flakes and lime juice together in a smaller bowl.

When your chicken is cooked, mix with the salad. Pour over the dressing and serve immediately. Perfect for eating alone or sharing with friends.
