Healthy and full of flavour, this vegetarian curry is sure to whet any appetite - even meat lovers will be converted!


Boil In The Bag Rice

1 piece (try Lloyd Grossman’s Balti Sauce)

200 g 200g pack, washed and sliced

1 piece large, cut into small cubes

Start by boiling your potato cubes in a saucepan of water for 5 minutes, until soft.

Meanwhile, heat the oil in a large frying pan over a medium to high heat. Fry the onions for 5 minutes, then add the mushrooms. Drain the potatoes and add to the pan. Now add the curry sauce. Simmer for 12 minutes.

While the curry is simmering, make your Boil In The Bag rice according to the packet's instructions. It will be ready in 12 minutes.

Serve with a wedge of lime for extra flavour or with some delicious naan bread to mop up the sauce. Tasty!
