This is a fresh and fast supper that will leave you reaching for seconds.
Pre-heat your oven to 200c/180c fan/Gas Mark 6. Put your baby potatoes into a roasting dish with one tablespoon of olive oil and a good pinch of salt and pepper.
Roast them for 20 to 30 minutes, or until tender.
Rub your steak with a tablespoon of olive oil and season with a pinch of salt and pepper.
Heat one tablespoon of olive oil in a frying pan over a high heat. Fry your steak to your preference. Once cooked, set the steak aside for 5 minutes before slicing.
Divide the potatoes between two bowls. Divide the steak between the two bowls. Crumble 50g of feta cheese on top of each bowl and finish with one tablespoon of freshly chopped mint over each bowl.
