Start your day with an egg sunny side up – you'll never look at a fried egg in the same way again!
Heat the olive oil in a large frying pan over a medium to high heat.
Using a circular pastry or cookie cutter, cut out a circle in the centre of each slice of bread.
Place the slices of bread (now with a hole in the centre) into the hot frying pan. Fry on one side for 3 minutes or until golden brown.
Flip over the bread and crack one egg carefully into each hole. Fry for 5 minutes until the egg has set, being careful not to burn the bread underneath. If the egg hasn't set on top, finish cooking it under the grill until it has set.
Sprinkle with salt and pepper and serve.
