The trick with this one is to find the perfect shaped peppers that will give that shamrock shape.
Slice the pepper into rings.
Melt butter in frying pan over a medium heat.
Place pepper ring into the pan and crack an egg inside the pepper ring.
Cook until the yolk reaches your desired doneness. Remove from frying pan and trim edges with a knife if necessary. Accompany with fried sausages and rashers and serve with a finely brewed cup of Centra tea!
