Make mushrooms the main event of your meal with this simple, mouth-watering recipe. Bursting with flavour, this breakfast favourite will always go down well!


2 slice white batch bread (preferably)

200 g washed and sliced

50 millilitre

Heat the olive oil in a large non-stick frying pan over a medium to high heat. Add your mushrooms and sprinkle with the salt. Fry for 4 to 5 minutes, stirring constantly until their colour changes and they soften.

Add your chopped spring onion and garlic and cook for a further 2 minutes. Keep stirring so that all the ingredients mix well. Then add the 1/2 tablespoon of freshly squeezed lemon juice and cook for a further 1 minute.

Now add 50ml of single cream. Keep on the heat for 1 more minute, stirring constantly, until the cream heats through.

Serve on a thick slice of toast and tip your hat to those transformed mushrooms.
