Bread 4 slice white |

Heat the olive oil in a large non-stick frying pan over a medium to high heat. Cook your bacon for 4 to 6 minutes, until crisp and golden.
Meanwhile, beat three eggs in a large bowl and add the salt and pepper. Mix well.
Once your bacon is done, set it aside and keep warm. Don’t wash your frying pan! You’re going to fry your French toast in the same pan so they'll soak up some of that lovely bacon flavour.
Turn down the heat to medium for the frying pan. There should be enough leftover oil from the bacon so there's no need to add any more.
One by one, dip your bread slices into the egg mixture until they’re well coated. Then place them carefully on to the frying pan. You will probably be able to fit two slices of bread at a time. Fry for between 1 and 2 minutes on either side, until they’re deliciously golden.
Pile your plate with your French toast and bacon, drizzle generously with maple syrup and tuck in!
