This is the breakfast version of ham, egg and chips and is a great way to start a lazy weekend.
Heat two tablespoons of olive oil in a large frying pan over a medium to low heat.
Meanwhile, peel and wash the potatoes before dicing them into small cubes.
Add the potato cubes to the hot oil and give them a shake so they are evenly spread out. Let them fry for 10 minutes without moving them. You have them on a low heat so they won't burn and leaving them alone will really help them get crispy and golden.
Meanwhile, cut your bacon into cubes. Peel and finely slice your onion and garlic. In a second frying pan, fry the three ingredients together for about 5 minutes in the remaining one tablespoon of olive oil. Set them aside.
After the potatoes have had ten minutes, give them a good shake and use a wooden spoon to turn them over. Give them another 10 minutes.
In a third frying pan, fry your eggs.
Finally, mix together the golden potato cubes and the cooked bacon, onion and garlic. Sprinkle over the salt and pepper before dividing evenly between two bowls. Top with the cooked eggs and dig in.
