Asparagus Soldiers and Soft Boiled Eggs

Method

Start by heating the olive oil in a large frying pan or griddle pan over a medium to high heat.

Wrap the bacon around the asparagus spears, so that the stem is covered in bacon. Fry for 8 to 10 minutes on the pan, turning so that the bacon cooks evenly.

Meanwhile, boil your eggs in a saucepan of boiling water until they're at a consistency you like – soft boiled is best for this recipe though so we recommend boiling for 4 to 5 minutes.

Serve your bacon wrapped asparagus spears alongside the soft boiled egg, sprinkling the dish with the salt and pepper.
